Pregnancy Journey

October 1, 2012 was the scariest but yet happiest day of my life. I found out I was pregnant,  I cried when I found out I was pregnant, I mean who wouldn't?  I was still in college, I didn't know if I was ready to be a parent.

As my pregnancy went by day by day, there were ups and downs. The first 14 weeks I had terrible morning sickness, I couldn't eat, the smell of food and perfume gave me the worst headaches. I lost six pounds during the first trimester. Before I got pregnant I was 126 pounds at 5"2. I didn't know what to expect when I was pregnant,  trust me I couldn't even travel long distance.  I would get really bad car sickness. Anyway at 15 weeks I felt great, I mean besides waking up all hours of the night to go to the restroom. When I was pregnant with my son I hated meat, the only meat I ever ate was chicken. 

Being pregnant to me meant not pigging out every chance I got just because I was eating for two. My parents and my son's father's side of the family, told me to keep active, eat right and not to be lazy. I was scared because I always ran everyday before I got pregnant,  so at first I didn't run the first weeks of me being pregnant. I was sad I couldn't run, because running to me was my comfort. What I found comfort in, being alone, and being at peace.  After I talk with my midwife she told me I could still run, but not to push myself. So later that day I ran a short distance, 2 miles I would say. I loved it, being physically fit during my pregnancy helped me bounce back to where I was before i got pregnant. As I got bigger I stopped running and did light exercises, yoga was very helpful as well.

My cravings were average, I loved spicy hot food. I remember one week during my pregnancy I ate nothing but subway, my son's father hated it. But hey at least it was healthy.  The only non healthy food I craved was blow pops, weird I know. But they were so good. I also had nothing but water and juice when I was pregnant,  I hated the taste of soda. Anything sweet, cakes, ice cream, and candy bars,  they didn't settle with my stomach.

Back to my journey, I was 35 weeks and 2 days when I gave birth to my son. I weighed 152, but it didn't matter to me, my son was worth it. After giving birth and a couple of days later I weighed 133. Breastfeeding helped me lose weight also, I breastfed  my son for 3 months.  I wanted to continue breastfeeding, but my body apparently didn't want too. (TMI) My milk supply was low. So I had to switch to formula.  After six weeks, I started to get back to working out. Just little late night workout sessions in my room for 45 minutes each night,  working on my abs mostly. Than running every now and then. Now almost 2 years later I still workout mostly at night, and I also weigh less than my pre-pregnancy weight at 119. My son gets a kick out of my workouts.  Always laughing and trying to join in, which he does. So my advice to you is take care of yourself when you're pregnant,  don't be lazy and let yourself go. Be a good healthy example for your kids. It well take time,  but it is worth it.

So people always say how lucky I am that I never got stretch marks. Truth is every morning and before bedtime I used coca butter on my tummy. It really worked for me when I was pregnant. Well hope you enjoyed today's blog. 😊

Home Made Egg Rolls

Home Made Egg Rolls

 
 

       Okay so I know I promised posting this recipe awhile back. But I haven't really had time to blog, with school, homework and being a full time mom. I've missed blogging, so I thought today I would share my version of egg rolls with you all. It is super easy, fast and simple. If you're like me, I really don't like too much spices in my food. Especially egg rolls, so I came up with this simple recipe.

 
 
What you will need
 
 
1 bag of classic coleslaw
1 pack of egg roll wraps
1 bottle of soy sauce
1 bottle of vegetable oil ( any oil you like, could be olive, peanut, etc)
1 pack of meat ( pork, chicken, beef) your choice
1 cup of water
 
  1. Okay first thing you do is preheat the oil, if you have a deep fryer that would work perfectly. But if you don't you can add oil to a small saucepan, and heat it on the stove.
  2. Next cut your meat into small cubes, I personally love using chicken breast the flavor is so good, well pork and beef are a huge hit as well.
  3. Use a medium saucepan and add about 2 tablespoons of oil to the pan. Then add your meat to the pan, use about 2 or 3 tablespoons of soy sauce to flavor the meat. Stir the meat until it is done.
  4. Add the coleslaw to the pan with the meat and you can also add 1 tablespoon of soy sauce to the pan again. Cook the coleslaw with the meat on low heat for about 5 minutes.
  5. Now once that is done, open your egg roll wraps and read the instructions on there. About how to roll the wrap. The instructions should be pretty clear on what to do, but I took photos for a step by step instruction. Put about 2 big tablespoons in the middle of the egg roll wrap. Use the cup of water to wet the edges of the egg roll wrap so they could stick to the side once you roll them up. That way the filling don't burn on the inside.
  6.  Once you are done filling them and rolling them up they should look like this.


 
 7.  Once all that process is done, your oil is usually about ready for the egg rolls. I suggest putting  three or four egg rolls in the oil and turning them over so they cook evenly. I usually leave them in there for 3 minutes. They should be a nice brown crispy color.
 


 8. Do this process to the remaining egg rolls, then plate them with a paper towel underneath. This is the finish product. This egg roll recipe is so easy, it takes 30 minutes or less, enjoy! :)
